Turkey with Fresh Avocado Sauce

We know what you are thinking… avocado? But it is a healthy fruit, that people often mistake as a vegetable. Not that it matters too much, since it’s packed full of vitamins and minerals that are good for your health.  A regular serving of avocadoes provides vitamin C, B, K and B-6, they provide lutein and beta carotene, fiber and healthy fats, riboflavin, magnesium and potassium.  

Healthy eaters know that avocadoes are a nutritional power house and try to incorporate them in as many salads and recipes as possible. You’ll want something light and fresh on the side of this healthy meal, so consider making an Asian inspired coleslaw or insalata misto with a balsamic and olive oil dressing.   Skip the bun and serve it side by side for a balanced meal in less than 15 minutes.

Hawaiian Burger with Grilled Pineapple

Fancying a taste of the islands?  Everything delicious that comes from Hawaii is seasoned with strong notes of pineapple, and it’s not hard to see why this fruit is a winner when paired with moist and tender turkey.  Grilling pineapple is a piece of cake too, and you can also pan sear it on the stove or use an inside electric grill to do the job, if you don’t want to head outside to the barbeque.

Figs and Goats Cheese

Talk about mouth-watering!  When you combine the salty and robust flavor of warm goat cheese with grilled figs, something magical happens to your taste buds.   Not only is this combination elegant (think date night burger or when you want to grill to impress) but it is also loaded in healthy antioxidants and fiber.

 Remember to wash the figs thoroughly, and lightly brush them with olive oil to prevent sticking on the grill, and then cook for roughly 5-8 minutes before removing them.  Split the softened figs in half and flatten them, and top the turkey patty while hot, with a generous portion of goat cheese.   For some extra healthy greens and nutrients, consider adding some fresh arugula to your patty.

Brown Sugar and Butter Grilled Apples
